A Family Favorite

My Husband and kids LOVE potato anything. My mom will vouch for me on that one I know, she's seen them down the potatoes. :) In the cool weather they can't wait for me to make baked potato soup for them. They say it tastes like Bennigan's. So, I thought I'd share the recipe. WARNING: THIS IS NOT LOW FAT!!

4 large bake potatoes
2/3 cup butter
2/3 cup flour
6 cups milk ( I use skim so it's a little less fat)
4 green onions, chopped
12 slices bacon, fried and crumbled
2 cups shredded cheddar cheese
1 cup sour cream (again, I use low fat)

1. Cut baked potatoes in half and scoop out pulp and put in small bowl.

2. Melt butter in large kettle. Add flour. Gradually stir in milk. Continue to stir until smooth, thickened, and bubbly. (*with skim milk it doesn't get too thick)

3. Stir in potato pulp, salt and pepper to taste, three-quarters of the onions, bacon and cheese. Cook until heated. Stir in sour cream.

4. Top with remaining onions, bacon, and cheese for garnish.

This also transfers really well to a slow cooker on low to take to potlucks. I have found the one time (yes, only once) I took it, it went over really well. At least I didn't have any to take home :)

I have a potato soup recipe, but this one sounds better - if it tastes like Bennigans! How long would it take in a crock-pot?

I also just made a new potato soup recipe, but this one sounds so much better! I can't wait to try it.

Kelly, I have never made it in a crock pot, just kept it warm in one. I would think that because of the cream base it would have a good chance of burning. If you try it and it works let me know :)

Ahhh yes, what will you be doing on your big day??

The soup does sound great- anything with cheese and sour cream is a winner in my book!

I just realized Sarah wasn't talking about your birthday, which is coming up in a couple weeks!

So are you sharing the big news next week. I am feeling it's a girl, too...

You're right Kara, my birthday is a bit away. Which by the way, I'll be at church that weekend of the 28th and can't wait to see you guys!!!

We'll probably share. I'm not sure that my dad would be able to keep it quiet :)

For those of who don't know, we let Hannah and James decide if we as a family were going to find out what the baby is. So we are!
