Recipes


I know you all have been chatting about soup recipes. I need some new ones! Anybody have a quick soup that they have already made and kids like?

Soup on a -12 degree day...great idea!

Split pea with ham is great! Forrest even likes it and it is one of Noah's favorite. Here is how I make it...

2 tsp olive oil (or canola) so good for you
1 onion, chopped
1 stalk of celery, chopped
1 carrot, chopped
2 potatoes, cubed
1 tsp cummin
Black pepper, a few turns of your grinder or a few shakes of your shaker
1 cup split peas
4 cups water or veggie stock
1 large bay leaf
1/2 cup fresh or frozen peas
1 tsp salt
1 tsp dried dill
As much ham as you want.

Heat oil in soup pot, add onions and saute until they begin to soften. Add celery, carrots, potatoes, cumin and pepper. Saute 5-7 more minutes. Add split peas, water, bay leaf and ham. Bring to a boil, lower heat and simmer for about an hour and a half...The peas will turn to mush and make a great base. Add fresh peas, salt and dill, stir until peas are tender and serve.

I got this from "Feeding the Whole family". It is a great book, has modifications for the little ones...so like for Evan, She says reserve some soup prior to adding salt and puree in blender for him. But with the flu, he may not be intrested in food anyway:(

White Chicken Chili is one of our favorites!

1 large jar of White Northern Beans
1 large can (or leftover) chicken
1 jar of salsa (you can use mild if the kids like it better)
1 block of Monterey Jack cheese that has jalepenos in it, or Pepperjack cheese, shredded.

Just heat it all up. Thin it out with some chicken broth if you want to. We eat it with Scoops!

It's a nice quick soup when you don't have time to shop, chop, etc. It's all in the cupboard!
